Internship Program at Beijing University of Chinese Medicine

Hi Everyone! You may remember that I posted earlier this year about an internship program that I was going to be joining in Taiwan. Well, due to logistical planning issues, the internship program has been changed. I am going to be a part of the internship program at Beijing University of Chinese Medicine in September of 2015. The good news is that although I have to wait, this trip will be with a larger group that includes professors as the organizers and it will be a more well-rounded and well-organized trip. I also have more time to fundraise! yay!
Again, big thank you to my supporters and please help me reach my goal! If you can’t contribute financially and want to help, please contact me directly for other ways to support! In the meantime, please spread the word and share my updates on social media! Please visit my Go Fund Me page for updates, videos, pictures and to support!

Veggie Tacos

Veggies Tacos

corn tortillas

can of black beans (or fresh ones!)

1 avocado

1 diced tomato

about 1 cup of chopped lettuce

1 tblsp of red onion

lime

sea salt

about 1/2 cup of cilantro

about 2 cups of sliced mushrooms

1 red pepper

cooking oil (grape seed, coconut, avocado are great choices)

a dash of coconut or rice milk, about 1 tblsp or so

To make Guacamole:

mash 1 avocado, add onion, cilantro, a squeeze of lime, a pinch of sea salt and mix well until creamy but a still a little chunky. set aside.

to make refried black beans:

in a medium sauce pan, heat about 1 tablespoon of oil, add black beans and a dash of coconut or rice milk. mash and stir the beans, not too much just enough to have a medium creamy/chunky consistency (like the guac). add a little sea salt if you wish. turn off the heat.

for the veggies:

in a medium frying pan, heat another tablespoon of oil, add the sliced red pepper and sauté for about two minutes, then add the sliced mushrooms and sauté for about another minute, leaving the vegetables somewhat soft but not overly cooked. add a little sea salt.

to assemble the tacos:

heat the tortillas on a comal (this is a surface for warming tortillas, if you don’t have one, warm them however you prefer). spread a spoonful of beans, then the veggie mix, then the guacamole and then top with lettuce and tomato.

ready to serve and enjoy! yum!

you can also modify this recipe with different veggies of your choice; squash, asparagus, string beans, sweet potatoes, etc. you can also buy or make your own salsa to add to the tacos for even more flavor. you can also use different kids of fresh veggies as toppers instead of lettuce and tomato; you can use spinach (or any other kinds of greens) and pickled onion, or cabbage.

New Year, New Trip!

Happy new year friends!
Today is the start of a new week and new possibilities. I am excited to announce that I will be traveling to Taiwan in April for two weeks as part of a study abroad program through my university.
Every year there is an opportunity for senior interns to travel to Taiwan and intern for two weeks in a hospital setting to train and observe clinical practice.  I am raising funds to attend this trip, and have started a GoFundMe account. Any support you can offer will be greatly appreciated and I will be sending a thank you gift to supporters that provide their information.

This is my story:

My first experience with Acupuncture was when I became diagnosed with Lupus in 2007. I had been ill for months, before I finally figured out what was wrong with me.

Around the time I was diagnosed, my health was getting worse, I had quit my job, was in a huge amount of debt and I was basically drained by life. I fell into a very deep depression. I had no medical insurance and I felt my situation was hopeless.

I researched day and night on the disease; I’d read about people who took the medication prescribed by their doctors, only to find themselves getting worse by the side effects. I’d read about people that did nothing and died. It was scary, to say the least. My Kidneys were failing and the rheumatologist said I’d die if I didn’t start taking the medication he had prescribed.

Finally, after much research and coercing by my mother, I tried Acupuncture. I made an appointment with Michael Fox at Silverlake Acupuncture and from that first treatment, something in me changed forever.

I finally had faith that I would be able to feel better, every day…and I did.  Everyday was better than the last, and things just kept on improving, I couldn’t believe it. Acupuncture touched me deeply. I felt as though it was my mission to share my experience with the world…I felt that this was one secret everyone should know.

Career-wise, I was no longer feeling fulfilled with the 10-year run I had in the fashion industry. I knew this was my calling: to become an acupuncturist. I wanted to make people feel better, the way that I had felt better. I wanted to inspire others to have faith in healing again, because I had almost lost mine.

Today, my health has drastically improved. I’m probably the healthiest I have ever been.
I still feel that same drive to inspire others, even just a fraction of what I have been inspired by the healers I have had the great fortune of meeting.

My passion and interest in Acupuncture and Traditional Chinese Medicine run deep. I would love to delve further into the art of this medicine and be able to learn, observe and absorb as much as possible.

I feel that going on this trip will help to bring me closer to a more thorough and fundamental understanding of the medicine from a different perspective.

I find it particularly important to learn about the medicine directly from the source, and from a place that truly practices Traditional Chinese Medicine.

Your support is appreciated, every little bit helps.

Thank you so much for reading!
